Unbottled monthly, each wine dinner is one of a kind.

Each month, we select a wine from our extensive cellar of over 175 bottles, often something rare or exclusive to The Inn. This wine serves as the starting point for our dinner. Chef Lucas crafts a four-course menu designed to complement the wine’s structure, flavour profile, and seasonal ingredients.

We don’t repeat bottles, and we don’t reuse menus. Each dinner is designed for that wine, that moment, and that night only.

His culinary expertise and impeccable taste guarantee that each dish is a masterpiece, perfectly complementing the wines being poured. With a focus on seasonal ingredients and wine-led inspiration, Chef Lucas concocts each menu around the bottles being poured. His method blends classic technique with creative plating, offering dishes that complement and occasionally challenge the wine itself.

Bobby curates a collection that strikes a balance between rare discoveries and timeless favourites. Notable highlights include the Garnacha De Arrayán, with only five cases available in Alberta, and the Arrayán Premium Blend (2013), the final vintage, with just seven cases secured in Canada. These exclusive offerings are complemented by a carefully assembled cellar that pairs perfectly with The Inn’s dining menus.

Wine dinners are announced on a recurring basis throughout the year, each one a standalone experience shaped by the season, the cellar, and the chef.

Yes. Seating is limited, and these events tend to fill up quickly. We recommend reserving early once a new date is announced.
